In just 20 minutes, you can whip up this vibrant Loaded Chicken Torta that will transform your kitchen into a lively feast of colors and aromas. Ready to relish every bite of this hearty sandwich? Let’s dive into the steps!
- Shred Chicken:
Pull all the meat and skin off the rotisserie chicken. Shred the chicken into bite-sized pieces, enjoying the tender texture in your hands. The savory aroma from the chicken will already have your senses dancing with anticipation. - Preheat Griddle:
Preheat your griddle to medium heat. Drizzle a bit of avocado oil over the surface, letting it shimmer slightly as it heats up. This will create the perfect base for your chicken, enhancing the crispiness as it cooks. - Sauté Chicken:
Add the shredded chicken to the griddle along with the chopped green chiles and pickled jalapeños. Sprinkle your desired amount of taco seasoning over the mixture. Cook for 5 minutes, stirring occasionally until the chicken is warmed through. You’ll know it’s ready when the chicken sizzles and starts to form golden, crispy bits that smell just heavenly. - Add Tomato & Cheese:
Toss in the diced tomato and shredded pepper jack cheese to the chicken mixture. Stir to combine, letting the cheese melt and bubble—watch for those delightful golden edges. The moment the cheese hits that hot griddle, your kitchen will be filled with a cheesy aroma. - Toast Bolillo:
Slather mayonnaise on both sides of the bolillo rolls. Place them cut-side down on the griddle and toast for 2 minutes, then carefully flip to toast the other side. Listen for that satisfying sizzle, and watch as the bread turns golden brown and slightly crispy. - Assemble Torta:
Use spatulas to transfer the crispy chicken mixture onto the bottom half of the toasted bolillo. Top the chicken with finely shredded iceberg lettuce, chopped cilantro, and diced white onion, creating a colorful layer of freshness. Finally, place the other piece of toasted bread on top and slice it in half.
And there you have it—your Loaded Chicken Torta is bursting with flavor, texture, and heart! Go ahead, share this masterpiece with friends or savor it all for yourself. Enjoy every single bite!

Twist It Up: Fun Variations & Alternative Methods
Cooking is all about making a dish your own, and I love playing with different flavors and textures! Here are a few fun variations for the Loaded Chicken Torta that you can easily try out:
- Beefy Delight: Swap out the rotisserie chicken for some grilled or sautéed beef. Use a nice flank steak or even ground beef, seasoned well. The richness of beef adds a whole new depth and pairs beautifully with the zesty toppings.
- Cheesy Goodness: If you’re not a fan of pepper jack, feel free to experiment with another cheese. Cheddar adds a nice sharpness, while gouda provides a creamy, smoky twist. Choose whatever melts well and excites your tastebuds!
- Griddle Flexibility: Whether you want that crispy, golden-brown goodness on a stovetop or an outdoor grill, it’s all good! Just keep an eye on the cooking times, as the outdoor grill might offer a slight smokiness that complements the bold flavors.
Each of these variations can add unique flair to your Loaded Chicken Torta, transforming it into something special just for you. Happy cooking!
Keeping the Loaded Chicken Torta Fresh
Once you’ve savored your Loaded Chicken Tortas, you might find yourself with some delightful leftovers. No worries! Just pop those beauties into an airtight container and store them in the fridge. They’ll stay fresh for up to three days. If you want to keep them longer, they can be frozen, but make sure to enjoy them within a month for the best flavor. Just let them cool completely before sealing to ensure they stay nice and fresh.
When you’re ready to dive back in, I recommend reheating them on the stovetop over low heat. Just place your sandwich in a skillet and cover it with a lid. This method keeps the bread crispy while warming up the filling without drying it out. Trust me, that melty, cheesy goodness is worth the extra love!
