Ingredients
  

  • 2 medium zucchinis spiralized
  • 1 red bell pepper thinly sliced
  • 1 yellow bell pepper thinly sliced
  • 2 medium carrots julienned
  • 3 cloves garlic minced
  • 1 cup low-sodium soy sauce
  • 1 tbsp sesame oil
  • 1 cup protein chicken, shrimp, or tofu
  • 2 tbsp hoisin sauce
  • Chopped green onions for garnish

Method
 

  1. 1. Spiralize the zucchinis and prepare the bell peppers and carrots.
  2. 2. In a large skillet or wok over medium-high heat, heat sesame oil and sauté garlic until fragrant.
  3. 3. Add zucchini noodles, bell peppers, and carrots; stir-fry for about 5 minutes until slightly softened but still crunchy.
  4. 4. Pour soy sauce and hoisin sauce over the vegetables; add your choice of protein and cook until heated through (about 3 minutes).
  5. 5. Remove from heat and garnish with chopped green onions before serving.
