Ingredients
  

  • 2 medium zucchinis grated
  • 1 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • 2 large eggs room temperature
  • ½ cup vegetable oil
  • ½ tsp salt

Method
 

  1. Preheat your oven to 350°F (175°C). Grease and flour a loaf pan or line it with parchment paper.
  2. Grate the zucchinis and squeeze out excess moisture using a clean kitchen towel.
  3. In a large bowl, whisk together flour, sugar, baking soda, cinnamon, and salt.
  4. In another bowl, beat eggs and oil until smooth. Stir in grated zucchini.
  5. Gradually add the wet ingredients into the dry ingredients and mix until just combined.
  6. Pour the batter into the prepared loaf pan and bake for 50-60 minutes until golden brown and a toothpick comes out clean.
  7. Allow cooling in the pan for 10 minutes before transferring to a wire rack.
