Zaalouk with Tahini

Ingredients
  

Vegetables
  • 2 medium Eggplants peeled and diced
  • 2 medium Tomatoes chopped
  • 1 medium Onion finely chopped
  • 2 cloves Garlic minced
Condiments
  • 3 tablespoons Tahini
  • 2 tablespoons Olive Oil
  • 1 tablespoon Lemon Juice freshly squeezed
  • 1 teaspoon Cumin ground
  • 1 teaspoon Paprika smoked
  • 1 teaspoon Salt to taste
  • 1/2 teaspoon Black Pepper freshly ground
Garnish
  • 2 tablespoons Fresh Parsley chopped

Method
 

Cooking the Vegetables
  1. Heat olive oil in a skillet over medium heat. Add the chopped onion and garlic, sauté until translucent.
  2. Add the diced eggplants and cook for about 10 minutes, stirring occasionally until they start to soften.
  3. Stir in the chopped tomatoes, cumin, paprika, salt, and pepper. Cook for another 15-20 minutes until the mixture is thick and the eggplants are tender.
Finishing Touches
  1. Remove from heat and let cool slightly. Stir in tahini and lemon juice until well combined.
  2. Transfer to a serving bowl and garnish with chopped parsley.
  3. Serve warm or at room temperature with bread or as a side dish.

Notes

Zaalouk can be made ahead of time and stored in the refrigerator for up to 3 days. The flavors improve as it sits.
