Ingredients
  

  • 3-4 boneless skinless chicken breasts (about 1 lb)
  • 2 cloves fresh garlic minced
  • 8 medium flour tortillas
  • 1 can 10.5 oz cream of chicken soup
  • 1 cup sour cream
  • 2 cups shredded cheese Cheddar or Monterey Jack
  • 1 cup low-sodium chicken broth

Method
 

  1. Preheat oven to 350°F (175°C) and spray a baking dish with nonstick cooking spray.
  2. Cook the chicken in boiling water or chicken broth for 15-20 minutes until tender. Shred using two forks.
  3. In a bowl, mix shredded chicken with minced garlic, cream of chicken soup, and half of the shredded cheese.
  4. Spoon filling onto each tortilla, roll tightly, and place seam-side down in the baking dish.
  5. Whisk together chicken broth and sour cream in another bowl, then pour over the assembled enchiladas.
  6. Top with remaining cheese and bake for 25-30 minutes until bubbly.
