Ingredients
  

  • 3-4 boneless skinless chicken breasts (about 1 lb)
  • 2 cloves fresh garlic minced
  • 8 flour tortillas
  • 1 can 10.5 oz cream of chicken soup
  • 1 cup sour cream or Greek yogurt
  • 2 cups shredded cheddar cheese
  • 1 can 4 oz diced green chiles
  • 1 cup low-sodium chicken broth

Method
 

  1. Preheat oven to 350°F (175°C) and lightly grease a 9x13 inch baking dish.
  2. Cook chicken in boiling water until fully cooked (15-20 minutes), then shred into bite-sized pieces.
  3. In a bowl, mix shredded chicken, garlic, cream of chicken soup, sour cream, green chiles, and half of the cheddar cheese.
  4. Spoon mixture onto each tortilla, roll tightly, and place seam-side down in the baking dish.
  5. Whisk remaining cream of chicken soup and chicken broth; pour over rolled enchiladas and top with remaining cheese.
  6. Bake for 25-30 minutes until bubbly and golden brown.
