- Roast the Garlic (Quick Skillet Method): In a small saucepan or skillet over low heat, combine peeled garlic cloves and 2 tablespoons olive oil. Cook gently for 10-12 minutes, swirling occasionally, until the cloves are tender, sweet, and lightly caramelized golden brown. Remove cloves and reserve the fragrant garlic oil.
- Warm the Spicy Hot Honey: In the same small warm pan, stir together wildflower honey, red chili flakes, and apple cider vinegar over low heat for 2 to 3 minutes until infused and warm. Remove from heat and set aside to steep.
- Whip the Feta Base: In a high-powered food processor fitted with an S-blade, combine crumbled feta cheese, softened cream cheese, lemon juice, lemon zest, cracked black pepper, and 3-4 cloves of the soft roasted garlic.
- Emulsify Until Silky: Process on high for 2 minutes.
