Ingredients
  

Potatoes
  • 2 pounds Yukon Gold potatoes peeled and diced
Dressing
  • 1/4 cup olive oil extra virgin
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey
  • 1/2 teaspoon salt adjust to taste
  • 1/4 teaspoon black pepper freshly ground
Add-ins
  • 1 cup green onions sliced
  • 1/2 cup bacon cooked and crumbled
  • 1/4 cup fresh parsley chopped

Method
 

Prepare the Potatoes
  1. Place the diced potatoes in a pot and cover with water. Bring to a boil and cook until tender, about 15-20 minutes.
  2. Drain the potatoes in a colander and let them cool slightly.
Make the Dressing
  1. In a mixing bowl, whisk together the olive oil, apple cider vinegar, Dijon mustard, honey, salt, and black pepper until well combined.
Combine Ingredients
  1. Add the warm potatoes to the dressing and toss gently to coat.
  2. Fold in the green onions, bacon, and parsley.
Serve
  1. Transfer the warm potato salad to a serving dish and serve immediately.
