Ingredients
  

Burger Patties
  • 1 can black beans drained and rinsed
  • 1 cup quinoa cooked
  • 1 cup corn fresh or frozen
  • 1 medium bell pepper diced
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 cup breadcrumbs for binding
  • 1 tablespoon olive oil for cooking
Toppings
  • 4 slices cheese optional
  • 4 buns burger buns whole grain recommended
  • 1 cup lettuce washed and dried
  • 1 tomato sliced
  • 1/2 cup pickles sliced
  • 1/4 cup ketchup optional
  • 1/4 cup mustard optional

Method
 

Prepare the Burger Mixture
  1. In a mixing bowl, mash the black beans with a fork or potato masher until mostly smooth.
  2. Add the cooked quinoa, corn, bell pepper, onion, garlic, cumin, paprika, salt, and pepper. Mix well.
  3. Stir in the breadcrumbs until the mixture holds together.
Form and Cook the Patties
  1. Divide the mixture into 4 equal portions and shape each into a patty.
  2. Heat olive oil in a skillet over medium heat. Cook the patties for about 5-7 minutes on each side, until golden brown.
Assemble the Burgers
  1. Toast the burger buns if desired. Place a patty on each bun and top with lettuce, tomato, pickles, and any other desired toppings.
  2. Serve with ketchup and mustard on the side.
