  • 1 cup all-purpose flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup unsalted butter softened
  • 1/3 cup granulated sugar
  • 1/3 cup brown sugar
  • 1 tsp vanilla extract
  • 1 large egg
  • 2 cups vanilla ice cream or your favorite flavor

Method
 

  1. Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a bowl, whisk together flour, baking soda, and salt.
  3. In a large bowl, beat softened butter, granulated sugar, brown sugar, and vanilla until light and fluffy.
  4. Add egg and mix until well combined.
  5. Gradually stir in dry ingredients until just combined.
  6. Scoop tablespoon-sized portions onto baking sheets, spaced apart. Bake for 10-12 minutes until golden brown. Cool completely.
