Ingredients
  

  • 6 small Russet potatoes
  • 2 tbsp olive oil
  • 1 cup sharp cheddar cheese shredded
  • 1/2 cup sour cream
  • 1/4 cup green onions chopped
  • 1/4 cup bacon bits

Method
 

  1. Preheat oven to 400°F (200°C). Wash potatoes and poke holes with a fork.
  2. Rub potatoes with olive oil and sprinkle with salt. Bake for 45 minutes until tender.
  3. Cool slightly, slice in half lengthwise, and scoop out the insides into a mixing bowl.
  4. Mix scooped potato with cheddar cheese, sour cream, green onions, and bacon bits until creamy.
  5. Spoon the mixture back into potato skins and bake at 375°F (190°C) for an additional 15-20 minutes until golden brown.
