  • 1 lb lean ground turkey
  • 2 medium sweet potatoes diced (about 2 cups)
  • 1 medium yellow onion chopped
  • 3 cloves garlic minced
  • 1 bell pepper chopped (any color)
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 2 tbsp olive oil
  • Salt and pepper to taste

Method
 

  1. Prepare the ingredients: Peel and dice sweet potatoes, chop onion and bell pepper.
  2. Sauté vegetables: Heat olive oil in a large skillet over medium heat. Add onion and bell pepper; sauté until soft (about 5 minutes).
  3. Cook turkey: Add ground turkey to the skillet; cook until browned (about 6–7 minutes), breaking it apart as it cooks.
  4. Add spices: Stir in minced garlic, cumin, and paprika; mix well.
  5. Incorporate sweet potatoes: Fold in diced sweet potatoes with enough water to cover them partially (about half a cup). Simmer covered for about 10 minutes until tender.
  6. Serve hot: Adjust seasoning with salt and pepper; serve garnished with fresh herbs or avocado slices.
