Ingredients
  

  • 2 cups cooked turkey shredded
  • 1 medium onion chopped
  • 2 medium carrots sliced
  • 2 stalks celery chopped
  • 3 cloves garlic minced
  • 6 cups low-sodium chicken broth
  • 1 tsp dried thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • 1 tbsp olive oil

Method
 

  1. In a large pot, heat olive oil over medium heat. Add onion, carrots, and celery; sauté for about 5 minutes until softened.
  2. Stir in minced garlic and cook for 1 minute until fragrant.
  3. Add shredded turkey to the pot and mix well with the vegetables.
  4. Pour in chicken broth and enough water to cover the ingredients by an inch. Bring to a gentle boil.
  5. Add thyme and bay leaf, then season with salt and pepper. Reduce heat and let simmer for 20 minutes.
  6. Remove bay leaf before serving hot, optionally garnished with fresh parsley.
