  • 1 lb lean ground turkey
  • 1 medium onion finely chopped
  • ¼ cup fresh parsley chopped
  • Salt and pepper to taste
  • 2 cups pasta dough or store-bought
  • Vegetable oil for frying

  1. If making dough from scratch, mix flour and water until it forms a soft dough. Knead for 5 minutes.
  2. In a bowl, combine ground turkey, onion, parsley, salt, and pepper; mix well.
  3. Roll dough into thin circles (about golf ball size).
  4. Place 2 tablespoons of filling on one half of each circle. Fold and seal edges.
  5. Heat oil in a skillet over medium heat until shimmering.
  6. Fry chebureki until golden brown on both sides (about 3 minutes per side). Drain on paper towels.
