Ingredients
  

Pasta and Base
  • 8 oz pasta (fusilli or penne) cooked and cooled
  • 1 can tuna drained
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 1/2 cup red onion finely chopped
Dressing
  • 1/4 cup olive oil
  • 2 tbsp lemon juice freshly squeezed
  • 1 tsp dijon mustard
  • 1 tsp salt to taste
  • 1/2 tsp black pepper freshly ground
  • 1 tbsp fresh parsley chopped

Method
 

Prepare the Pasta
  1. Cook the pasta according to package instructions. Drain and rinse under cold water to cool.
Combine Ingredients
  1. In a large mixing bowl, combine the cooked pasta, tuna, cherry tomatoes, cucumber, and red onion.
Make the Dressing
  1. In a small bowl, whisk together the olive oil, lemon juice, dijon mustard, salt, and black pepper.
Mix Salad
  1. Pour the dressing over the pasta mixture and toss gently to combine. Garnish with fresh parsley.
Serve
  1. Chill in the refrigerator for at least 30 minutes before serving for best flavor.
