Ingredients

  • 1 lb tomatillos husked and rinsed
  • 1 small onion chopped
  • 2 cloves garlic minced
  • 1 small jalapeño seeded and chopped
  • 1/2 cup fresh cilantro chopped
  • 1 lime juice freshly squeezed
  • 1/2 tsp salt to taste

Method
 

Preparation
  1. In a saucepan, bring water to a boil and add the tomatillos. Cook for about 5-7 minutes until they are soft and their color changes to a dull green.
  2. Remove the tomatillos from the water and let them cool slightly.
  3. In a blender, combine the cooked tomatillos, onion, garlic, jalapeño, cilantro, lime juice, and salt.
  4. Blend until smooth or to your desired consistency.
  5. Taste and adjust seasoning if necessary. Serve immediately or refrigerate for later use.
