Ingredients
  

Salad Base
  • 4 cups mixed greens such as lettuce, spinach, or arugula
  • 1 cup shredded carrots
  • 1 cup cucumber sliced
  • 1 cup red bell pepper sliced
  • 1/2 cup red cabbage shredded
  • 1/4 cup green onions sliced
  • 1/4 cup cilantro chopped
Peanut Dressing
  • 1/4 cup peanut butter creamy or crunchy
  • 2 tablespoons soy sauce low sodium preferred
  • 1 tablespoon lime juice freshly squeezed
  • 1 tablespoon honey or maple syrup for vegan option
  • 1 teaspoon sesame oil
  • 1 clove garlic minced
  • 2 tablespoons water to thin dressing

Method
 

Prepare the Salad
  1. In a large mixing bowl, combine mixed greens, shredded carrots, cucumber, red bell pepper, red cabbage, green onions, and cilantro.
Make the Dressing
  1. In a separate bowl, whisk together peanut butter, soy sauce, lime juice, honey, sesame oil, minced garlic, and water until smooth.
Combine and Serve
  1. Drizzle the peanut dressing over the salad and toss gently to combine. Serve immediately.
