Ingredients
  

Noodles
  • 8 oz rice noodles or any preferred noodles
Peanut Sauce
  • 1/2 cup creamy peanut butter
  • 1/4 cup soy sauce low sodium preferred
  • 2 tbsp rice vinegar
  • 1 tbsp honey or maple syrup for vegan option
  • 1 tbsp sesame oil
  • 1 clove garlic minced
  • 1 tsp ginger grated
  • 1/4 cup water to thin the sauce
Vegetables
  • 1 cup bell pepper sliced
  • 1 cup carrots julienned
  • 1 cup snap peas
  • 1/4 cup green onions sliced
  • 1/4 cup cilantro chopped for garnish

Method
 

Prepare the Noodles
  1. Cook the rice noodles according to package instructions. Drain and set aside.
Make the Peanut Sauce
  1. In a mixing bowl, whisk together peanut butter, soy sauce, rice vinegar, honey, sesame oil, garlic, ginger, and water until smooth.
Combine Ingredients
  1. In a large pot, combine the cooked noodles, peanut sauce, and vegetables. Toss until everything is well coated.
Serve
  1. Serve immediately, garnished with green onions and cilantro.
