Ingredients
  

  • 2 medium sweet potatoes about 400g, peeled and diced
  • 1 red bell pepper diced
  • 1 medium onion diced
  • 1 cup canned black beans drained and rinsed
  • 1 ripe avocado sliced (for topping)
  • ½ cup fresh cilantro for garnish
  • 2 tbsp olive oil
  • 1 tsp chili powder
  • 1 tsp cumin
  • Salt to taste

Method
 

  1. Prepare your veggies by peeling and dicing the sweet potatoes into small cubes. Dice the red bell pepper and onion.
  2. Heat olive oil in a large skillet over medium heat. Add sweet potatoes and cook for about 10 minutes until they begin to brown.
  3. Add the diced bell pepper and onion to the skillet. Sprinkle with salt and cook for another 5 minutes until softened.
  4. Stir in chili powder, cumin, and black beans; mix well and heat through for an additional few minutes.
  5. Serve hot, topped with sliced avocado and fresh cilantro.
