Method
- Preheat the oven to 350°F (175°C).
- In a skillet over medium heat, brown the ground beef until fully cooked. Drain excess fat and mix in 1 cup of enchilada sauce.
- Spread some enchilada sauce on the bottom of a baking dish. Place a tortilla on a flat surface, add about 1/4 cup of the beef mixture down the center, sprinkle with cheese, then roll it up and place seam-side down in the dish.
- Repeat with remaining tortillas. Pour any remaining enchilada sauce over the rolled enchiladas and top with extra cheese.
- Bake for 20 minutes or until bubbly and golden brown.
- Remove from oven and let cool slightly. Garnish with chopped cilantro and serve warm with sour cream.
