Ingredients
  

  • 1 lb lean ground beef
  • 2 cups enchilada sauce store-bought or homemade
  • 6 large flour tortillas
  • 2 cups shredded cheddar cheese
  • 1 cup sour cream or Greek yogurt
  • 1/4 cup fresh cilantro for garnish

Method
 

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet over medium heat, brown the ground beef until fully cooked. Drain excess fat and mix in 1 cup of enchilada sauce.
  3. Spread some enchilada sauce on the bottom of a baking dish. Place a tortilla on a flat surface, add about 1/4 cup of the beef mixture down the center, sprinkle with cheese, then roll it up and place seam-side down in the dish.
  4. Repeat with remaining tortillas. Pour any remaining enchilada sauce over the rolled enchiladas and top with extra cheese.
  5. Bake for 20 minutes or until bubbly and golden brown.
  6. Remove from oven and let cool slightly. Garnish with chopped cilantro and serve warm with sour cream.
