Ingredients
  

Crust
  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter cold and cubed
  • 1 large egg yolk
  • 2 tablespoons ice water
Filling
  • 4 cups fresh apricots pitted and halved
  • 1/4 cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch
  • 1 teaspoon vanilla extract

Method
 

Prepare the crust
  1. In a mixing bowl, combine flour and sugar. Add cold butter and mix until crumbly.
  2. Add egg yolk and ice water, mixing until a dough forms. Shape into a disk, wrap in plastic, and refrigerate for 30 minutes.
Prepare the filling
  1. In a separate bowl, toss apricots with sugar, lemon juice, cornstarch, and vanilla extract.
Assemble and bake
  1. Preheat the oven to 375°F (190°C). Roll out the chilled dough and fit it into the tart pan.
  2. Pour the apricot mixture into the crust and spread evenly.
  3. Bake for 35-40 minutes until the apricots are tender and the crust is golden.
  4. Allow to cool before serving.
