Ingredients
  

  • 3-4 boneless skinless chicken breasts (about 1 lb)
  • 2 cloves fresh garlic minced
  • 2 tsp ground cumin
  • 2 tsp smoked paprika
  • 8 flour tortillas thicker for extra crispiness
  • 1 cup shredded cheddar or Monterey Jack cheese
  • ½ cup sour cream
  • ½ cup salsa

Method
 

  1. Preheat oven to 400°F (200°C). Season chicken breasts with salt, pepper, cumin, and paprika.
  2. In a skillet, heat oil over medium heat and cook chicken for 6-8 minutes per side until cooked through. Let cool and shred into bite-sized pieces.
  3. In a bowl, mix shredded chicken with cheese and garlic. Optional: add corn or black beans.
  4. Roll filling in tortillas tightly and secure with toothpicks if needed.
  5. Place taquitos seam-side down on a parchment-lined baking sheet. Lightly spray with cooking spray.
  6. Bake for 15-20 minutes until golden brown and crispy. Serve hot with sour cream and salsa.
