Ingredients
  

Pasta
  • 8 oz Penne pasta
Meat
  • 1 lb Ground beef Can substitute with turkey or plant-based meat
Vegetables
  • 1 cup Bell pepper Chopped
  • 1 cup Onion Chopped
  • 1 cup Corn Frozen or canned
  • 1 cup Black beans Rinsed and drained
Sauce
  • 1 packet Taco seasoning
  • 1 cup Salsa
  • 1 cup Cheddar cheese Shredded

Method
 

Cook Pasta
  1. Bring a large pot of salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Drain and set aside.
Cook Meat and Vegetables
  1. In a skillet over medium heat, brown the ground beef until fully cooked. Drain excess fat.
  2. Add chopped bell pepper and onion to the skillet. Sauté until softened, about 5 minutes.
  3. Stir in the corn, black beans, taco seasoning, and salsa. Cook for an additional 5 minutes until heated through.
Combine
  1. Add the cooked pasta to the skillet and mix well to combine all ingredients.
  2. Sprinkle shredded cheddar cheese on top and stir until melted.
Serve
  1. Serve hot, garnished with additional cheese or fresh cilantro if desired.
