Swiss Chard Tart with Leeks and Pecorino

Ingredients
  

Tart Crust
  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter cold and cubed
  • 1/4 teaspoon salt
  • 3 tablespoons ice water more if needed
Filling
  • 1 bunch Swiss chard washed and chopped
  • 2 medium leeks sliced
  • 2 large eggs
  • 1 cup Pecorino cheese grated
  • 1/2 cup heavy cream
  • 1 teaspoon black pepper freshly ground
  • 1/4 teaspoon nutmeg freshly grated
  • 2 tablespoons olive oil for sautéing

Method
 

Prepare the Tart Crust
  1. In a mixing bowl, combine flour and salt. Add cold butter and mix until the mixture resembles coarse crumbs.
  2. Add ice water, one tablespoon at a time, mixing until the dough comes together. Form into a disk, wrap in plastic, and refrigerate for 30 minutes.
  3. Preheat the oven to 375°F (190°C). Roll out the dough on a floured surface and fit it into the tart pan. Prick the bottom with a fork.
  4. Blind bake the crust for 15 minutes, then remove from oven and set aside.
Prepare the Filling
  1. In a skillet, heat olive oil over medium heat. Add leeks and sauté until soft, about 5 minutes.
  2. Add Swiss chard and cook until wilted, about 5 minutes. Remove from heat and let cool slightly.
  3. In a bowl, whisk together eggs, cream, Pecorino cheese, black pepper, and nutmeg. Stir in the sautéed leeks and chard mixture.
  4. Pour the filling into the pre-baked tart crust and smooth the top.
Bake the Tart
  1. Bake the tart in the preheated oven for 25-30 minutes, or until the filling is set and the top is golden.
  2. Remove from the oven and let cool for a few minutes before slicing and serving.
