Ingredients
  

Eggs
  • 6 large eggs hard-boiled
Filling
  • 3 tablespoons mayonnaise
  • 1 teaspoon Dijon mustard
  • 2 tablespoons sweet pepper jelly
  • 1 teaspoon hot sauce optional
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste
Garnish
  • 1 tablespoon chopped chives for garnish
  • 1 tablespoon additional pepper jelly for topping

Method
 

Prepare the Eggs
  1. Place the eggs in a pot and cover with water. Bring to a boil, then remove from heat and cover for 10 minutes.
  2. Transfer the eggs to an ice bath to cool for 5 minutes, then peel and slice in half lengthwise.
Make the Filling
  1. In a mixing bowl, combine the yolks, mayonnaise, Dijon mustard, sweet pepper jelly, hot sauce, salt, and black pepper. Mix until smooth.
  2. Spoon or pipe the mixture back into the egg whites.
Garnish and Serve
  1. Top each filled egg with a small dollop of additional pepper jelly and sprinkle with chopped chives.
  2. Serve immediately or refrigerate until ready to serve.
