  • 1 cup sweet corn fresh or frozen
  • 1 cup medium-ground cornmeal
  • 1 cup whole milk
  • 1/2 cup unsalted butter melted
  • 1/4 cup granulated sugar
  • 1 tbsp baking powder
  • 2 large eggs
  • 1/2 tsp salt

Method
 

  1. Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking dish.
  2. In a bowl, whisk together cornmeal, sugar, baking powder, and salt.
  3. In another bowl, beat eggs with milk and melted butter until combined.
  4. Pour the wet ingredients into the dry ingredients and stir until just mixed; gently fold in sweet corn.
  5. Pour the mixture into the prepared baking dish and bake for 45-50 minutes until golden on top.
  6. Let it sit for 5 minutes before serving.
