Ingredients
  

  • 4 boneless skinless chicken breasts (about 1 lb)
  • 2 cloves fresh garlic minced
  • 1 red bell pepper diced
  • 1 yellow bell pepper diced
  • 1 cup pineapple chunks fresh or canned
  • 1 medium onion diced
  • 1/2 cup low-sodium soy sauce
  • 1/4 cup rice vinegar
  • 3 tbsp brown sugar
  • 2 tbsp vegetable oil

Method
 

  1. Chop the chicken into bite-sized pieces and dice the bell peppers and onion.
  2. Marinate the chicken with soy sauce, garlic, and black pepper for at least 15 minutes.
  3. Heat oil in a skillet over medium-high heat and sauté the marinated chicken until golden brown (about 6 minutes).
  4. Add the diced onions and bell peppers; cook until tender (about 4 minutes).
  5. In a separate bowl, whisk together rice vinegar, brown sugar, and pineapple juice; pour over chicken and veggies.
  6. Stir in pineapple chunks just to heat through; serve hot over rice or noodles.
