Ingredients

  • 1 cup unsalted butter softened
  • 1 ½ cups granulated sugar
  • 1 large egg
  • 2 tsp vanilla extract

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. Whisk together flour and baking powder in a bowl.
  3. In another bowl, cream softened butter and sugar until fluffy (about 2 minutes).
  4. Beat in the egg and vanilla until well combined.
  5. Gradually mix the dry ingredients into the wet mixture until just combined.
  6. Drop rounded tablespoons of dough onto prepared baking sheets, spacing them about two inches apart.
  7. Bake for 10-12 minutes until lightly golden at the edges but still soft in the middle.
