Ingredients
  

For the Chicken
  • 1 lb boneless chicken breasts grilled and sliced
  • 2 tbsp olive oil for grilling
  • 1 tbsp chili powder
  • 1 tsp garlic powder
  • 1 tsp cumin
  • 1 tsp salt
  • 1 tsp black pepper
For the Street Corn
  • 2 ears corn grilled and kernels removed
  • 1/4 cup mayonnaise for dressing
  • 1/4 cup cotija cheese crumbled
  • 1 tbsp lime juice
  • 1 tbsp cilantro chopped, for garnish
For the Rice
  • 1 cup white rice uncooked
  • 2 cups chicken broth for cooking rice
  • 1 tsp lime zest
  • 1 tsp salt

Method
 

Prepare the Chicken
  1. In a mixing bowl, combine olive oil, chili powder, garlic powder, cumin, salt, and black pepper. Add chicken breasts and coat evenly. Let marinate for 10 minutes.
  2. Preheat the grill to medium-high heat. Grill the chicken for 6-7 minutes on each side or until fully cooked. Remove from grill and let rest before slicing.
Prepare the Street Corn
  1. Grill the corn until charred, about 10 minutes. Let cool and remove kernels from the cob.
  2. In a bowl, mix grilled corn kernels with mayonnaise, cotija cheese, lime juice, and cilantro. Set aside.
Cook the Rice
  1. In a rice cooker, combine white rice, chicken broth, lime zest, and salt. Cook according to rice cooker instructions.
Assemble the Bowl
  1. In a bowl, layer the cooked rice, sliced grilled chicken, and street corn mixture. Garnish with additional cilantro and lime wedges if desired.
