- Preheat your oven to 350°F (175°C). Grease two round cake pans or line them with parchment paper.
- In a large bowl, whisk together flour, baking powder, and salt until well combined.
- In another bowl, beat softened butter and granulated sugar until light and fluffy, about 3-4 minutes.
- Add eggs one at a time, mixing well after each addition. Stir in lemon zest, lemon juice, and vanilla extract.
- Gradually add dry ingredients to the wet mixture, alternating with milk if needed. Mix until just combined.
- Gently fold in chopped fresh strawberries until evenly distributed throughout the batter.
- Bake until golden brown on top and a toothpick inserted comes out clean, about 25-30 minutes. Allow to cool completely before frosting.
- Whip powdered sugar with softened butter until creamy; then add lemon juice for zing. Spread frosting between layers and on top.
