Ingredients
  

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter melted
  • 16 oz cream cheese softened
  • ¾ cup granulated sugar
  • 1 tsp vanilla extract
  • 1 ½ cups fresh strawberries pureed

Method
 

  1. Preheat oven to 350°F (175°C). Combine graham cracker crumbs and melted butter in a bowl. Press into the bottom of a springform pan.
  2. Beat softened cream cheese until smooth. Gradually add sugar and mix well. Stir in vanilla extract.
  3. Puree fresh strawberries and fold half into the cream cheese mixture.
  4. Pour filling over crust in the pan and bake for 45-50 minutes until set around edges.
  5. Allow cooling at room temperature, then refrigerate for at least four hours before serving.
  6. Serve with remaining strawberry puree and fresh berries on top.
