Ingredients
  

Potatoes
  • 2 pounds Yukon Gold potatoes peeled and cubed
Dressing
  • 1 cup mayonnaise
  • 2 tablespoons Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon garlic powder
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste
Add-ins
  • 4 slices bacon cooked and crumbled
  • 1 cup green onions sliced
  • 1 cup cheddar cheese shredded

Method
 

Prepare the Potatoes
  1. In a large pot, bring salted water to a boil. Add the cubed potatoes and cook until tender, about 15-20 minutes. Drain and let cool.
Make the Dressing
  1. In a mixing bowl, whisk together mayonnaise, Dijon mustard, apple cider vinegar, garlic powder, salt, and black pepper until smooth.
Combine Ingredients
  1. In a large bowl, combine the cooled potatoes, crumbled bacon, sliced green onions, and shredded cheddar cheese. Pour the dressing over the top and gently mix until well combined.
Chill and Serve
  1. Cover the potato salad and refrigerate for at least 30 minutes before serving to allow flavors to meld.
