Ingredients
  

  • 2 cups short-grain sushi rice
  • 4 sheets nori
  • 1 ripe avocado sliced
  • 1 firm cucumber sliced into strips
  • 1 green bell pepper cut into strips
  • Low-sodium soy sauce for dipping

Method
 

  1. Rinse sushi rice under cold water until clear and cook according to package instructions until tender.
  2. While the rice cooks, slice avocado, cucumber, and bell pepper into thin strips.
  3. Place a bamboo mat on a clean surface and lay a sheet of nori shiny side down.
  4. Once rice is slightly cooled, wet hands and spread about 1 cup onto the nori, leaving an inch at the top edge.
  5. Add strips of avocado, cucumber, and bell pepper across the center of the rice-covered nori.
  6. Carefully roll from bottom to top using the bamboo mat to create a tight roll; seal with water along the edge.
  7. Slice into pieces and drizzle with soy sauce before serving.
