- Rinse the corned beef brisket under cold water to remove excess salt. Pat it dry with paper towels before seasoning with pickling spices.
- In a large pot, add chopped cabbage, carrots, and potatoes. Pour in enough water or beer to cover them completely.
- Place the seasoned brisket on top of the vegetables in your pot. Bring everything to a gentle boil over medium heat before reducing to low for about 3 hours.
- As it cooks, occasionally skim off any foam that forms on top for clarity in flavor.
- After three hours, poke that brisket with a fork; it should be tender but not falling apart.
- Once cooked through, remove the brisket from heat and let it rest for 10-15 minutes before slicing against the grain into hearty pieces.
