  • 1 piece Corned Beef Brisket Choose a high-quality brisket.
  • 1 head Cabbage Fresh green cabbage.
  • 3 medium Carrots Bright orange carrots.
  • 4 medium Potatoes Yukon Gold or red potatoes.
  • 2 tablespoons Pickling Spices Includes coriander, mustard seeds, and peppercorns.
  • 1 cup Beer Optional, a good stout adds richness.

Method
 

Preparation
  1. Rinse the corned beef brisket under cold water to remove excess salt. Pat it dry with paper towels before seasoning with pickling spices.
  2. In a large pot, add chopped cabbage, carrots, and potatoes. Pour in enough water or beer to cover them completely.
  3. Place the seasoned brisket on top of the vegetables in your pot. Bring everything to a gentle boil over medium heat before reducing to low for about 3 hours.
  4. As it cooks, occasionally skim off any foam that forms on top for clarity in flavor.
  5. After three hours, poke that brisket with a fork; it should be tender but not falling apart.
  6. Once cooked through, remove the brisket from heat and let it rest for 10-15 minutes before slicing against the grain into hearty pieces.
