Ingredients
  

Salmon and Marinade
  • 4 fillets salmon skinless
  • 1/4 cup honey preferably raw
  • 2 tablespoons Sriracha sauce
  • 2 tablespoons soy sauce low sodium
  • 1 tablespoon rice vinegar
  • 1 teaspoon garlic minced
  • 1 teaspoon ginger grated
Rice and Vegetables
  • 2 cups cooked rice white or brown
  • 1 cup cucumber sliced
  • 1 cup carrots shredded
  • 1 cup edamame shelled
  • 1/4 cup green onions sliced
  • 1 tablespoon sesame seeds for garnish

Method
 

Prepare the Marinade
  1. In a mixing bowl, whisk together honey, Sriracha, soy sauce, rice vinegar, garlic, and ginger until well combined.
Marinate the Salmon
  1. Place the salmon fillets in a shallow dish and pour the marinade over them. Let marinate for at least 15 minutes.
Cook the Salmon
  1. Preheat the oven to 400°F (200°C). Place the marinated salmon on a baking sheet lined with parchment paper.
  2. Bake for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork.
Assemble the Bowls
  1. In serving bowls, layer cooked rice, followed by the baked salmon, cucumber, carrots, and edamame.
  2. Garnish with green onions and sesame seeds before serving.
