Ingredients
  

Crust
  • 1 package pie crust store-bought or homemade
Filling
  • 2 cups fresh spinach washed and chopped
  • 1 cup mushrooms sliced
  • 1 cup heavy cream
  • 3 large eggs
  • 1 cup shredded cheese such as Gruyère or cheddar
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon nutmeg optional

Method
 

Prepare the Crust
  1. Preheat the oven to 375°F (190°C). Place the pie crust in the pie dish and prick the bottom with a fork.
Cook the Filling
  1. In a skillet over medium heat, sauté the mushrooms until they are soft. Add the spinach and cook until wilted. Remove from heat.
Mix the Egg Mixture
  1. In a mixing bowl, whisk together the eggs, heavy cream, salt, pepper, and nutmeg until well combined.
Assemble the Quiche
  1. Spread the sautéed spinach and mushrooms evenly over the pie crust. Pour the egg mixture over the top and sprinkle with shredded cheese.
Bake
  1. Bake in the preheated oven for 35-40 minutes, or until the quiche is set and the top is golden brown.
Serve
  1. Allow the quiche to cool for a few minutes before slicing. Serve warm or at room temperature.
