Ingredients
  

Crust
  • 1 package pie crust store-bought or homemade
Filling
  • 2 cups fresh spinach washed and chopped
  • 1 cup mushrooms sliced
  • 1 cup shredded cheese such as Swiss or cheddar
  • 4 large eggs
  • 1 cup milk or cream
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon nutmeg optional

Method
 

Prepare the Crust
  1. Preheat the oven to 375°F (190°C). Place the pie crust in the pie dish and set aside.
Cook the Filling
  1. In a skillet over medium heat, sauté the mushrooms until they are soft, about 5 minutes. Add the spinach and cook until wilted, about 2 minutes. Remove from heat.
Mix the Egg Mixture
  1. In a mixing bowl, whisk together the eggs, milk, salt, pepper, and nutmeg until well combined.
Assemble the Quiche
  1. Spread the sautéed spinach and mushrooms evenly over the pie crust. Sprinkle the shredded cheese on top, then pour the egg mixture over everything.
Bake
  1. Bake in the preheated oven for 35-40 minutes, or until the quiche is set and lightly golden on top. Let it cool for a few minutes before slicing.
