  • 1 lb large shrimp peeled and deveined
  • 8 small corn or flour tortillas
  • 2 tablespoons olive oil
  • 2 garlic cloves minced
  • 1 tablespoon lime juice freshly squeezed
  • 2 tablespoons chipotle sauce
  • Salt and pepper to taste
  • Fresh cilantro for garnish
  • Lime wedges for serving

Method
 

  1. Rinse and pat dry the shrimp.
  2. In a bowl, mix olive oil, minced garlic, lime juice, chipotle sauce, salt, and pepper. Toss shrimp in the mixture until coated.
  3. Heat a skillet over medium-high heat. Cook shrimp for 3-4 minutes per side until pink and opaque.
  4. Warm tortillas in a separate pan or wrap in foil and place in an oven preheated to 350°F for five minutes.
  5. Assemble tacos by placing cooked shrimp on tortillas and topping with chopped cilantro.
  6. Serve immediately with lime wedges.
