Ingredients
  

  • 2 cups elbow macaroni
  • 4 tablespoons unsalted butter
  • 1/4 cup all-purpose flour
  • 3 cups whole milk
  • 3 cups sharp cheddar cheese shredded
  • 1 cup breadcrumbs
  • 1 teaspoon paprika
  • Salt and pepper to taste

Method
 

  1. Cook the elbow macaroni in salted boiling water until al dente (7-9 minutes). Drain and set aside.
  2. In a saucepan, melt butter over medium heat. Whisk in flour to form a roux and cook for 2 minutes.
  3. Gradually add milk, stirring continuously until thickened (about 5 minutes).
  4. Remove from heat and stir in 2 cups of shredded cheese until smooth.
  5. Mix the cooked macaroni with the cheese sauce and transfer to a greased baking dish.
  6. Combine breadcrumbs and paprika; sprinkle over the mac and cheese along with remaining cheese.
  7. Bake at 350°F (175°C) for 25-30 minutes or until golden brown and bubbly.
