Ingredients
  

  • 1 cup sourdough starter well-fed
  • 2 ½ cups all-purpose flour
  • ¾ cup warm water 100°F/37°C
  • 4 cloves fresh garlic minced
  • ¼ cup olive oil
  • 1 tsp salt
  • 4 tbsp unsalted butter for garlic butter

Method
 

  1. In a large bowl, combine sourdough starter with warm water until mixed. Stir in flour and salt to create a shaggy dough.
  2. Knead the dough on a floured surface for about 10 minutes until smooth and elastic.
  3. Place the dough back in the bowl, cover with a damp cloth, and let it rise in a warm spot for at least 2 hours or until doubled in size.
  4. Punch down the risen dough, divide it into 8 equal pieces, roll each into ropes about six inches long, and tie them into knots.
  5. For garlic butter, melt butter in a pan over medium heat and sauté minced garlic until fragrant.
  6. Preheat your oven to 375°F (190°C). Brush each knot with garlic butter before baking on parchment paper for 20-25 minutes or until golden brown.
