Ingredients
  

Main Dishes
  • 2 lbs Collard greens washed and chopped
  • 1 lb Chicken thighs bone-in, skin-on
  • 1 cup Buttermilk for marinating chicken
  • 2 cups Cornmeal for frying
  • 1 tbsp Cajun seasoning for chicken
Sides
  • 2 cups Cooked rice for serving with collard greens
  • 1 cup Black-eyed peas cooked
  • 1 cup Corn fresh or frozen
Dessert
  • 1 cup Sugar for sweet potato pie
  • 2 lbs Sweet potatoes boiled and mashed
  • 1 tbsp Cinnamon for flavor
  • 1 tbsp Nutmeg for flavor
  • 1 pie Pie crust store-bought or homemade

Method
 

Prepare the Chicken
  1. Marinate chicken thighs in buttermilk and Cajun seasoning for at least 1 hour.
  2. Dredge marinated chicken in cornmeal and set aside.
Cook the Collard Greens
  1. In a large pot, simmer collard greens in water until tender, about 45 minutes.
  2. Season with salt and pepper to taste.
Fry the Chicken
  1. Heat oil in a skillet over medium heat and fry chicken until golden brown and cooked through, about 15-20 minutes per side.
Prepare the Sweet Potato Pie
  1. Mix mashed sweet potatoes with sugar, cinnamon, and nutmeg.
  2. Pour mixture into pie crust and bake at 350°F for 45 minutes.
Serve
  1. Serve fried chicken with collard greens, rice, black-eyed peas, and corn.
  2. Slice sweet potato pie and serve as dessert.
