Ingredients
  

Soup Base
  • 2 tablespoons vegetable oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken or vegetable broth
  • 1 cup tomato sauce
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
Noodles
  • 1 cup vermicelli noodles
Garnishes
  • 1/4 cup fresh cilantro, chopped

Method
 

Prepare the Soup
  1. In a saucepan, heat the vegetable oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  2. Add the minced garlic and cook for an additional minute until fragrant.
  3. Pour in the chicken or vegetable broth and tomato sauce. Stir in the cumin, oregano, salt, and black pepper.
  4. Bring the mixture to a boil, then reduce the heat and let it simmer for 10 minutes.
Cook the Noodles
  1. Add the vermicelli noodles to the simmering broth and cook according to package instructions, usually about 5 minutes.
Serve
  1. Ladle the soup into bowls and garnish with chopped cilantro and lime wedges.
