Method
Prepare the Pork
- Trim excess fat from the pork shoulder and pat it dry with paper towels.
- Mix all the rub ingredients in a bowl and generously coat the pork shoulder with the rub.
Preheat the Smoker
- Preheat your pellet smoker to 225°F (107°C) and add the hickory wood pellets.
Smoke the Pork
- Place the pork shoulder on the smoker grates and close the lid.
- Smoke for about 8 hours, or until the internal temperature reaches 195°F (90°C).
Rest and Shred
- Remove the pork from the smoker and wrap it in aluminum foil. Let it rest for at least 30 minutes.
- Shred the pork using two forks and serve with your favorite barbecue sauce.

For added flavor, you can spritz the pork with apple cider vinegar every hour during the smoking process.
