Method
Prepare the Ribs
- Remove the membrane from the back of the ribs for better flavor absorption.
- In a bowl, mix all the dry rub ingredients together.
- Rub the mixture generously over both sides of the ribs.
- Wrap the ribs in plastic wrap and refrigerate for at least 2 hours, preferably overnight.
Cook the Ribs
- Preheat the pellet grill to 225°F (107°C).
- Place the ribs on the grill grates bone side down.
- Smoke the ribs for 3 hours, maintaining a consistent temperature.
- After 3 hours, wrap the ribs in aluminum foil and return to the grill for another 1.5 hours.
- Unwrap the ribs, brush with BBQ sauce, and cook for an additional 30 minutes.
- Check the internal temperature; it should reach at least 190°F (88°C) for tender ribs.
Serve
- Remove the ribs from the grill and let them rest for 10 minutes.
- Slice between the bones and serve with extra BBQ sauce on the side.
