Ingredients
  

  • 1.5 pounds baby potatoes
  • 3 tablespoons olive oil
  • 4 garlic cloves minced
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly cracked black pepper
  • 2 tablespoons fresh herbs rosemary or thyme, chopped

Method
 

  1. Preheat your oven to 425°F (220°C).
  2. In a large pot of salted water, boil the baby potatoes until fork-tender (about 15-20 minutes). Drain and let cool slightly.
  3. Place each potato on a lined baking sheet and gently smash using the bottom of a glass or potato masher.
  4. Drizzle olive oil over the smashed potatoes and sprinkle with minced garlic, salt, pepper, and fresh herbs.
  5. Roast in the preheated oven for 25-30 minutes until golden brown and crispy on the edges.
