Ingredients
  

  • 2 pounds baby potatoes
  • 3 tablespoons olive oil
  • 4 cloves fresh garlic minced
  • 2 tablespoons fresh rosemary or thyme chopped
  • Salt and pepper to taste

Method
 

  1. Preheat the oven to 425°F (220°C) and rinse the baby potatoes under cold water.
  2. Boil the washed potatoes in a large pot of water for 15-20 minutes until fork-tender. Drain and let cool slightly.
  3. Gently smash each potato with a fork or palm until flattened.
  4. Place smashed potatoes on a parchment-lined baking sheet. Drizzle with olive oil and sprinkle with garlic, salt, pepper, and herbs.
  5. Bake for 25-30 minutes until golden brown and crispy. Serve warm.
