  • 2 lbs ripe tomatoes chopped
  • 1 medium yellow onion diced
  • 3 cloves garlic minced
  • 4 cups low-sodium vegetable broth
  • 2 tbsp extra virgin olive oil
  • 1/4 cup fresh basil leaves plus more for garnish
  • Salt and pepper to taste

Method
 

  1. Sauté onions and garlic in olive oil over medium heat until translucent.
