Ingredients
  

  • 1.5 lb chicken breasts
  • 1 red bell pepper, diced
  • 0.5 large yellow onion, diced
  • 2 garlic cloves, chopped
  • 0.5 cup peanut butter, creamy
  • 0.5 cup chicken broth
  • 0.25 cup soy sauce
  • 1 tbsp honey
  • 1 tsp sesame oil
  • 1 tsp chili garlic paste
  • 1 tbsp lime juice
  • 2 tbsp cilantro, chopped

Method
 

  1. Add the bell pepper, onion, and garlic to the bottom of your slow cooker, then place the chicken breasts on top.
  2. In a bowl or glass measuring cup, whisk the peanut butter, chicken broth, soy sauce, honey, sesame oil, and chili garlic paste together.
  3. Pour the sauce over the chicken, then cook on HIGH for 2-3 hours or on LOW for 4-5 hours.
  4. Remove the lid, then stir in the lime juice and cilantro. Enjoy!
