Ingredients
  

  • 1 lb lean ground beef
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 cup bell peppers chopped (any color)
  • 1 can 15 oz diced tomatoes, drained
  • 4 cups low-sodium beef broth
  • 1 can 10.5 oz nacho cheese soup
  • 2 tbsp taco seasoning
  • ½ cup sour cream for serving

Method
 

  1. Brown the ground beef in a skillet over medium heat until fully cooked; drain excess fat.
  2. Sauté chopped onions and minced garlic in the same skillet until fragrant (about 5 minutes).
  3. Transfer the beef mixture to the slow cooker and add diced tomatoes, bell peppers, beef broth, nacho cheese soup, and taco seasoning. Stir well.
  4. Cover and cook on low for 6 hours or high for 3 hours.
  5. Serve hot with toppings like sour cream, shredded cheese, or jalapeños.
