Ingredients
  

  • 4 boneless skinless chicken breasts (about 1.5 lbs)
  • 4 cups low-sodium chicken broth
  • 1 can 14.5 oz diced tomatoes (fire-roasted preferred)
  • 1 can 15 oz black beans (drained and rinsed)
  • 1 medium onion diced
  • 2 bell peppers diced
  • 1 cup frozen corn
  • 2 cups tortilla chips for serving
  • 2 tsp chili powder
  • 1 tsp cumin
  • 1 tsp garlic powder
  • Salt and pepper to taste

Method
 

  1. Dice the onion and bell peppers; rinse the black beans.
  2. Layer chicken breasts at the bottom of the slow cooker. Add onion, bell peppers, corn, black beans, diced tomatoes, and chicken broth.
  3. Season with chili powder, cumin, garlic powder, salt, and pepper.
  4. Cover and cook on low for 6 hours or high for 3 hours.
  5. Shred the chicken once cooked through and return it to the pot.
  6. Serve hot topped with tortilla chips, avocado slices, cheese, or sour cream.
